The Mexican Chipotle Pizza with Quail Eggs Recipe
What you need
2oz/60ml Smoky Chipotle Salsa
2oz/60ml Creamy Mozzarella
1 tbsp Parmesan cheese
Crispy Bacon
4 Quail eggs
1 Avocado
Handful of Coriander
2 tbsp Sour Cream
½ Red Shallot
2 Lime
2 Large Red Chili
2 tbsp Olive Oil
Method:
Preheat a cast iron pan over low heat in the Revolve Pizza Oven
Crisp up the bacon in the cast iron pan
Prepare guacamole with the avocado, minced chili, shallots, olive oil, lime juice, and a pinch of salt
Stretch your dough
Spread the salsa on your pizza and sprinkle with parmesan and mozzarella cheese
Place pieces of crispy bacon on the pizza
Bake the pizza at 450 degrees for 60 seconds or 80% done
Take the pizza out and break the quail eggs over the pizza
Place back in the Revolve Pizza Oven and cook for another 10-20 seconds
Add dollops of guacamole and sour cream on the pizza
Sprinkle with chopped chili and squeeze some lime on the pizza
